Dandelions

I know what you're thinking-bitter stem, but the herb is quite delectable. Use heads for fritters, leaves for stir-frys, roots for tea, etc.

Fiddleheads

The unfurled portion of a lady fern or ostrich fern can be used easily in a variety of recipes. They're tasty and fun too!
